We first ferment the wine at a controlled temperature in stainless steel vats. After, it will mature in “tinajas” (concrete vessels). Once fermentation is complete it will be bottled to keep fresh aromas intact.

Montilla-Moriles: the soil
The chalky white albariza is calcium carbonate-rich soil, with soil and subsoil formed soft marl, poor in natural organic matter, infertile, simple mineralogical composition with a flaky or crumbly structure that allows moisture retention.
The roots of our vines usually extend about two feet deep, although the taproot may exceed four meters.
