Type: New Wine of Tinaja
Ripened grapes: Pedro Ximénez and Montepila
We first ferment the wine at a controlled temperature in stainless steel vats. After, it will mature in “tinajas” (concrete vessels) where the rest of fermentation takes place under a “vel de flor” (layer of yeast).

We produce white wine (“Vino de Tinaja”) which can be enjoyed young, or transferred to our “criadera y solera” ageing system where it will be aged in barrels for 3-4 years, resulting in Fino wine. Our Vino de Tinaja wine can also be used to fill American oak barrels where it can develop into our delicious sweet Pedro Ximenez wine.
