Fino wines are matured under a “veil of flor” (layer of yeast) and require a minimum of three years ageing before they can be transferred to American oak barrels where ageing is carried out through the “criadera and solera” system.

What is the "criadera and solera" system?
It is a dynamic system by which older wines are carefully blended at various stages with younger wines from different stages of the ageing process. This perpetuates specific characteristics of the wine which will be finally sold on the market. This allows us to offer a more homogenized product.
The blend of wines from different seasons that occurs as a consequence of the system of “criadera and solera,” makes it impossible to catalogue these Fino wines to any specific vintage.

We make wines with character. The predominant grape variety in all of our production is the Pedro Ximenez, the indisputable queen of Montilla.
