Our cheese is made only with raw milk.
We create our fresh cheese according to our ancestral family cheesemaking tradition that is deeply rooted in our land, Friuli. We process raw milk with the addition of a natural starter we make in the farm.
We mature our cheese for just one month. Despite its youthfulness, it is flavourful and presents a firm texture.

Several years ago we decided to open another cheese factory in the valley. An idea that borns out of the passion of making cheese with raw milk even during winter time; doing so we increased production, we satisfy the customer that can not come to the alm in summer and we sell at Km 0 which is the greatest satisfaction of an agricultural entrepreneur.
We make fresh ricotta, caciotta, cured cheese, ricotta gnocchi and lots more!
