Ageing: 1 year in concrete amphora and earthenware clay jars.
Area: Axarquía, Malaga (Spain)
Mediterranean forest, peach, honeycomb, orange peel, vanilla, clove, tobacco, and smoky.
Cured sheep or goat cheese, Foie de Canard.
We are a small artisanal winery...
…making organic wines, in the Axarquia comarca, without the use of synthetic products. Not in our vineyard, nor in the cellar. We use only plants to fight diseases, animals to control our pests, and indigenous yeasts to ferment our wines.
We aim to produce wines with the utmost respect for the land, climate, landscape, and the people connected to it.
Paraje “Las Viñuelas de Sedella” bush vines planted in no particular order in 1940 with indigenous ungrafted varieties Romé Tinta, Garnacha Tinta, Jaen Tinta and other local grapes.
The soil is made up of laminated slate with a gorge type orography. The very eroded grey shales and low organic content combined with extremely loose and rocky soil allow water to quickly drain from the surface. The vines of the plantations here are forced to develop deep roots to reach a water source.
