A treasure in the shadow of Jerez
The DO Montilla Moriles extends to the south of the province of Córdoba. The Guadajoz and Genil rivers limit its eastern and western borders, while the Guadalquivir to the North and the Subbética Mountains to the south delimit its outline.
We are facing a production area and a process of aging which are unique in the world. This harvest is made in the last week of August, perhaps the earliest in Europe.
The aging system “under veil of flor” where a floating yeast layer protects wine from oxygen develops and transmits extraordinarily unique aromas makes it very sensitive to climatic variations.
The care to collect and select the best grapes is essential.
Young wine, fino amontillado oloroso, palo cortado, sweet wine and vinegar are the products of this land, based on their maturation process. Many wineries grow other varieties of white grapes and red, too.
